Camping Slow Cooker Chicken And Rice

Chicken and rice is an easy-to-make and classic comfort food that's perfect for camping. To prepare it in a crockpot, combine boneless chicken, uncooked rice, chicken broth, and your favorite seasonings, and cook on low for 4-6 hours. Once done, fluff the rice with a fork and serve. It's a great option for campers looking for a simple and hearty meal that provides the necessary fuel for outdoor activities.

Ingredients

  • 1 1/2 pounds boneless skinless chicken thighs or chicken breasts
  • 1 1/2 cups long grain brown rice
  • 1 large onion finely chopped
  • 2 large carrots chopped
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/4 cup cream cheese cubed
  • 3 cups chicken broth low sodium
  • 1 cup peas frozen
  • 3 tablespoons parsley finely chopped
  • 1/2 cup cheddar cheese shredded

Instructions

  1. In a large crock pot, add onion, carrots, Italian seasoning, salt, pepper, cream cheese and brown rice. Give it a good stir. Lay chicken and pour chicken broth on top.

  2. Cover with the lid and cook on High setting for 2 hours with chicken breasts or 2.5 hours with chicken thighs, or until all liquid has been absorbed and rice is cooked but firm. I recommend to check after 2 hours in any case.

  3. Remove chicken onto a plate, shred with two forks and return back to slow cooker along with peas and parsley. Stir gently, sprinkle cheese on top and cover. Turn off heat and let chicken and rice sit for 5-10 minutes or until cheese has melted.

  4. Serve hot garnished with extra parsley.
