Turkey vegetable stew is one of our favorite crockpot camping meals because it's packed with nutrients and flavor and easy to make. It's hearty, filling, and can be made in advance, so you can enjoy the great outdoors more and less fuss over dinner. The turkey's proteins will help repair and build muscle, while the vegetables provide essential vitamins and minerals. This particular recipe also includes beans, a great fiber source. Fiber helps keep you full, so you won't be tempted to snack between meals. 

Another great benefit of this dish is that you can make it ahead of time. Simply prepare the ingredients at home and pack them into your crockpot before leaving for your trip. Then, when it's time for dinner, all you'll need to do is turn on the crockpot and let the stew cook while you enjoy some quality time around the campfire. Ingredients

  • 2 pounds boneless, skinless turkey (breasts, thighs, legs, etc.)
  • 1 medium leek, sliced
  • 2 stalks celery, chopped
  • 2 teaspoons thyme
  • 1 teaspoon oregano
  • 1 teaspoon Italian seasoning
  • 1 cup winter squash, peeled & cubed
  • 1 16-ounce can organic tomatoes
  • 1 medium carrot, chopped
  • 3 cups chicken broth (adjust depending on how watery you like it)

Instructions

  1. Place turkey, leeks, celery and spices into slow cooker. Turn on high and sauté until leeks become translucent.
  2. Add squash, carrots, tomatoes, water or stock and simmer, covered, for 2–3 hours on medium or up to 6-8 hours on low.
  3. Remove cinnamon stick just prior to serving.
